Vibrations between 20 and 30 kHz

The ultrasonic cutting machine uses a blade that vibrates at a frequency between 20 and 30 kilohertz. These vibrations create minimal friction with the product, allowing the blade to glide through soft fillings without applying pressure. This prevents layers from shifting or mixing. Mousse, whipped cream and glazes also remain neatly in place. The technique additionally prevents adhesion to the blade. Hardly any product residue sticks, significantly simplifying the cleaning process. The result is a cut that is neat, clean and visually perfect—on every product, at any time of day.
